You are right there were many fake Fotek ssr's around years ago, might still be the case.

240v , 14.20833 Amps 16.8915 ohms 3410 watts . Per element . I am running two of these elements

240v , 14.20833 Amps 16.8915 ohms 3410 watts . Per element . I am running two of these elements . Not sure if I need to add or state this but time is valuable and I hate to waste your time . So here it is I am running 14 gauge wire as well . The last ssr I lost is still working it just melted the outside of the housing and reached 200 degrees f while the oven was 410 approximately.

Your email and I am wired exactly like you shown in the diagram minus the junction boxes and power block (nice touch by the way I like that ) anyway we can check wiring off the list . Now 14 gauge wire and 40 amp ssr and I’m pulling 28 might as well call it 30 Amps . I’m thinking I’m overloading the ssr. Recommended ssr brand ?

I've had good success with all Omron products but there are probably many other high quality component manufacturers. Another option if you cannot get good results is to incorporate a cooling fan onto the heatsink or purchase one in this configuration. Years ago I documented a control box build that shows many of these components, etc. Here is a link to the thread which still exists.

Lastly are you using hi-temp wire for the last leg of the circuit to the elements? If not this will certainly present a problem at some point.
